Grilled Corn



Summer has come to Egypt. And what a perfect stroll in the night with busy streets full of cars and people specially on thursday and friday nights. While strolling with the family we bumped into this woman vendor who was grilling corn along the way and I asked for 5 .Incidentally, did you know that corn is packed with health benefits ? Despite the lack of green, it really is a healthy veggie.  Here are just one reason to enjoy those tasty niblets:

Corn is a great source of fiber

One cup of corn provides 18.4% of the daily recommend intake of fiber.  Fiber has been shown to help lower cholesterol levels and to help reduce the risk of colon cancer. Fiber is also useful in helping to lower blood sugar levels in diabetics.  Besides that, fiber keeps the digestive system regular.
So I hope you’ll fire up the grill and keep your body happy with this wonderfully tasty dish.  It’s freshness  and health benefits are sure to make you holler… This is SO yummilicious!

Mango Juice

1 mango
some sugar
1 L cold water

Peel the mango or scoop the inner side and pulse them up altogether and presto!...you can add ice cubes if need them :)...Bon Appetit!

Chicken and Cheese Croquettes Recipe

Ingredients

1/4 cup Olive Oil or Corn Oil
1 cup finely chopped onion
1/3 cup All Purpose Flour
1 cup milk
1 1/2 cups finely shredded cheese
1/4 kilo chicken, finely chopped
1 teaspoon hot pepper sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 large eggs
2 cups unseasoned dry bread crumbs
Corn or Pure Vegetable Oil, for frying

Directions

Heat olive oil in medium saucepan over medium heat. Add onion and cook until tender, about 5 minutes. Stir in flour; cook 1 minute. Stir in milk. Cook until sauce thickens, about 3 minutes, stirring constantly. Stir in cheese, chicken, hot pepper sauce, salt and pepper. Spread mixture onto a dinner plate. Chill until firm.

Beat eggs lightly in medium bowl. Place bread crumbs in another medium bowl. Shape chicken mixture into 1-inch balls or 2-inch long ovals or cylinders. Dip each croquette in bread crumbs to coat. Roll in beaten egg, then return to bread crumbs and roll until coated on all sides. Chill 1 hour.

Heat 3/4-inch vegetable oil in medium heavy saucepan over medium-high heat. Cook croquettes in oil, a few at a time, until golden brown, about 3 minutes. Serve warm with ketchup or tahini sauce.:)



Easy Veggie Pizza



Easy Veggie Pizza

Ingredients:


1 & 1/5 Cups All purpose flour + extra for dusting
1 Cup Whole Wheat flour
1/2 tsp Sugar
1/2 tsp Salt
1 Packet of instant Yeast
2 tbsp Extra Virgin Olive Oil
1 Cup Warm Water and some for yeast proofing

Method:

In a small bowl, take 1/3 cup warm water and add sugar and yeast. Stir well and let it rest for 10 mins. It will be doubled in amount.

In food processor bowl, combine the all purpose flour, Wheat flour and salt. Pulse it for 2-3 seconds. Add yeast mixture and run food processor on medium speed. While running, add the olive oil. Add the warm water slowly. Process it until the flour forms into dough. If dough is too sticky or dry add some more flour or water to adjust.

Transfer the dough on clean surface of counter and knead it for 2-3 times. Place the dough into oil greased bowl. Cover with damp cloth and place it in warm place for 1 - 1 and a half hour. It will be doubled in volume. Punch the dough with your knuckles and let it rise for another 1/2 hour.

Heat oilve oil in a pan, add crushed garlic and sauté for few minutes. Add pureed tomato and salt. Cook it for 10-12 mins on low heat. Season with black pepper powder, red chili flakes, dried oregano, and sugar. Stir well. Cook for 5 mins more. Remove from the heat.

Leave it aside to cool at room temperature. It’s best to make it on beforehand.

You can decorate your pizza as per choice. Feel free to use any vegetable and fruit for topping.

Next, spread the sauce on the dough, sprinkle some shredded cheddar cheese. Decorate your pizza with your preferred toppings. Finally sprinkle some red chilli flakes and oregano. Cook pizzas for about 12-15 minutes, or until cheese is bubbly and golden and base is crisp.

Ingredients:
Dough:

3 cup Floor
1 Egg
1 tbsp Yeast
1/2 tsp Sugar
Pinch of Salt
3 tbsp Oil

Pizza Filling:

1 cup boneless Chicken cut into squares
1 tbsp Chilli flakes
1 tsp Oregano
1 tsp Salt
1 tsp black pepper
1 tsp Lemon juice
1 tsp Oregano
1 tsp Salt
1 tbsp olive oil
Pizza sauce:

4 Tomatoes ( blend )
1/2 Onion chopped
1 tsp Garlic (grinded)
3 tbsp Oil olive oil
1 tsp Chilli flakes
1/2 tsp Oregano
Salt to taste

Pizza Topping:

1 Capsicum , sliced
1 tomato , sliced
1 cup mozzarella cheese

For Dough:

Mix yeast and sugar in warm water and let it rise. Sifter flour and salt together and add egg and oil in it . Knead with luke warm water and yeast mixture . Leave to rise for one hour

For Chicken:

Marinate chicken with all filling ingredients
Heat 1tbsp of olive oil and fry chicken in it

For Sauce:

Stir fry onion in olive oil . Add garlic and tomato paste in it and cook . Add all spices to it and mix well . Now add little water to it and cook for 15 minutes and add in the sauce.

Method;

Grease a pan . Roll out pizza dough and spread in pizza pan . Apply a thick layer of pizza sauce over pizza dough . Now make layer of grated cheese . Keep fried chicken, capsicum slices and chopped onion over cheese layer . Sprinkle little cheese over it again
Sprinkle little salt and oregano over top. Bake for 15 minutes at 200 C . Chicken Pizza is ready to serve :)

Macaroni Bechamel with ground beef




Macaroni Bechamel with ground beef
 
Here i added one egg on the surface of the bechamel to give some crispy taste on :)

Ingredients

1 box penne pasta
1 lb ground beef
1 onion (chopped)
2 garlic cloves (minced)
2 cups blended tomato (i pulse it 2 times only)
1 egg (beaten)
1 dash parmesan cheese (optional)

8 cups milk (cold)(I use 4 milk/4 water)
6 tbsps butter/oil
6 tbsps flour
1 tsp nutmeg (optional)
1 beaten eggs + 1 for the surface
salt
black pepper

Method:

Prepare pasta according to directions on the box. 2 Saute the onion in a little oil over med high heat until soft. Add garlic and saute another 2 minutes. Add the ground beef and brown. Drain off the fat. Stir in the tomato and simmer over low heat about 10 minutes. Remove from the heat and let it cool. Set aside.

TO MAKE THE BACHAMEL SAUCE:

In a large saucepan over med-high heat, melt the butter or oil. Once melted whisk in the flour until smooth. Keep whisking for 2 minute. Now whisk in the milk slowly until all the milk has been added. Keep whisking making sure there are no lumps in it. Add the salt and black peppers to your taste. Whisk pretty continuously until the milk is almost boiling, but not quite. Now whisk in the nutmeg (if you want it). The sauce should now be fairly thick. Quickly whisk in the beaten eggs. Remove from heat.

TO ASSEMBLE THE DISH:

Mix half the bachamel mixture into the pasta. Put half the pasta covered with the sauce into a 9x13 baking pan. Now layer the entire meat mixture over the pasta. You can top with a sprinkling of Parmesan cheese if you like. Now add the rest of the Pasta to form the top layer. Finally, pour and spread the remaining bachamel sauce over the top of the last layer adding one or two beaten egg on the surface. Bake it in the oven at 400 degrees for 45-60 min or until the top is golden brown. Enjoy!

Egyptian Black Eyed Bean with Beef Stew (Lubbia)

I Love this stew...it reminds me of Hunt's beans wayback home...you can also boil this bean and discard the water, rinse then cool in ref. transfer into a cute cup and add condensed milk + vanilla .:)

Here I use:

1/4 kilo black eyed beans (boiled)
3 tbsp oil / butter
1 onion cut into squares
2 cloves of garlic
1 tsp cumin powder
1/2 kilo beef
1 liter tomato juice (I use 6 tomatoes blended with water)
2 maggi cubes
1/2 tsp pepper



In a pot soak beans overnight in water to cover generously. Next day, drain beans, cover with fresh water and bring to boil. Simmer until beans are just tender, about 30 to 45 minutes. Heat oil or butter in deep saucepan. Add onion, garlic and cumin powder . Fry 5 minutes and add beef , maggi cubes and tomato juice . Cook until meat is tender then add lubbia (black eyed beans) and let boil for another 10 minutes. Continue to simmer, until lubbia are soft but not completely dissolved. Mixture should be soupy.

Cut out the stems, remove the seeds, and mix sweet and tart apples for the best fresh juice taste. Juicing the peel will greatly increase the antioxidant of the juice. The peels and skins of fruits and vegetables are where you will find the majority of antioxidants. This is their protection against oxidative damage as a result of sun exposure. Flavonoids are the type of antioxidant found most abundantly in apples and their peel.

Kiwi fruit is an excellent source of vitamin C, helping to keep our immune system strong and our skin firm. Vitamin C is needed to create collagen, the elasticated sticky substance that binds our skin cells together and keps the skin looking young.

Vitamin A is the nutrient most associated with eye health (and carrots) and is actually one of the most important nutrients for eyes.

Vitamin C and E don’t have as high a profile as vitamin A for eye health, but they also play an important role in the well being of our eyes. Like blackberries, apples and Kiwi.

Ingredients:
1 red apple
1 green apple
1 kiwi
2 small pears
1 cup fresh pineapple, cubed, skin removed
1 carrot
couple of blackberries
! Cantaloupe (remove skin)

My juicer cannot used hard skin fruits :)
Peel, juice, add some ice cubes enjoy !

Salad ng Ampalaya ( Bitter Gourd Salad )

 A friend said, i cant imagine eating bitter gourd without cooking it...but then every nation has its own taste:)

 Wash and slice 1-2 Bitter Gourd. Squeeze them with both of your palms to get off the bitterness.
Rinse , then transfer into a bowl, adding a slice of tomato,onion, hot pepper, Del Monte red vinegar, calamansi or lemon juice and add salt to taste.
Cool before serving. Best eaten with fried or grilled fish. grilled chicken or beef.. aw, Rice is important if you want too ^_^
